Fillet of doe with Blanc de Noirs
Ingredients
- 1 kg of tied doe fillet
- 2 shallots
- 2 carrots
- 50 cl of Cahors type wine
- 5 cl of rum for flambé
- Olive oil
- Butter
- Parsley
- Rosemary, pepper and salt
Method
- Sear the meat with the butter and oil
- Replace the meat with sliced shallots
- and allow them to brown lightly
- Add the flambé rum
- Put back the meat with the sliced
- carrots
- Salt and pepper while adding red wine
- and rosemary
- Cook on low heat for 25 minutes
- Serve very hot with a little parsley

Blanc de Noirs Bernard REMY
Grand Cru and Salmon
Ingredients
- 400g of smoked salmon
- or gravlax
- Fresh thyme
- Assortment of peppers
- Dill
Method
- Take the salmon out of the refrigerator
- 1h before eating
- Cut it into thin slices
- Crush the peppers and sprinkle on
- Place a small drop of olive oil
- Add a little thyme and dill

Millésime 2016 - Crème Brulée
Ingredients
- 150g of crème fraîche
- 100g of sugar
- 6 egg yolks
- 1 vanilla pod
- Brown or demerara sugar
Method
- Take out the vanilla seeds, blend
- with the cream and set over low heat
- with the vanilla pod split open
- Beat the egg yolks and sugar to
- obtain a ribbon of sugar
- Mix with the cream while still warm
- Place in ramekins
- Place in a water bath in the oven
- at 160°C for 35 minutes
- Leave to cool for 4 hours in the refrigerator
- Sprinkle with sugar before serving
- and caramelise with a torch.

Prestige and Cheese
Ingredients
- 4 cheeses of character, but not too strong
- 2 soft and 2 hard cheeses, for example:
- Saint Nectaire, Reblochon, Comté 12 months and Beaufort.
- A few fresh figs
- Seasonal grapes
- Autumn fruit
- Multi-grain bread
Method
- Take out the cheeses to ambient
- temperature 2 hours before eating
- Cut some thin slices of bread
- Cut the figs into quarters
- Have the milder cheeses
- before the stronger

Rosé and runny-centred chocolate cake
Ingredients
- 125g of flour
- 125g of unsalted butter
- 250g of caster sugar
- 200g of dark chocolate
- 4 eggs
- 1/2 packet of yeast
Method
- Preheat the oven to 180°C
- Melt the chocolate in a saucepan
- Take off the heat, add the butter, the flour and the yeast
- Whip the egg yolks with the sugar
- Then add it to the chocolate preparation
- Beat the egg whites stiff and incorporate into the preparation
- Pour the mixture into a buttered mould then bake
- for 35 minutes

Rosé Bernard REMY
Trio of Fish with Blanc de Blancs
Ingredients for 4 servings
- 4 fillets of white fish (Sole, halibut, sea bass, etc.)
- Half-salted butter
- Tarragon and parsley
- Fleur de sel and pepper
Method
- Melt the butter over low heat
- with the tarragon and parsley
- Place the butter so obtained in a pan
- Heat the butter until it browns
- Quickly coat the fillets both sides
- and lower the heat
- Stop heating at a flesh temperature of around 50°C
- Cover the fillet with a spoonful of the butter used for cooking
- A small pinch of salt and pepper
- A few shrimps and shellfish will add
- a ravishing touch to your dish!
